When the Shitterhausen pile just keeps getting big When the Shitterhausen pile just keeps getting bigger.How do you turn yourself into a JCB and dig yourself out?I’m still trying to work that one out.Nearly a year ago the fire stopped everything.Just as I felt we were getting back on our feet, the main fridge packed up over the weekend.Every side of salmon was ruined.Insurance?Not this time.The fault was in the refrigeration unit and my policy only covers fire and theft.Sometimes it feels like someone up there is having a right laugh.I stood there looking at all those fish and thought, “What now?”You can blame the world.You can feel sorry for yourself.Or you can get on with it.The fridge has been repaired.A fresh batch of land-based salmon is back in the Himalayan salt chamber.The dry ageing has started again.And so we go again.People see the finished slices.They see the photos.They see the brand.They don’t see the sleepless nights, the setbacks, the money lost or the moments when you wonder if you’ve got one more round left in you.But that’s where businesses are really built.Not when everything goes right.When everything goes wrong and you still turn up the next morning.I’ve never believed in perfection.I’ve always believed in finding perfection in the imperfections.Maybe that’s why this business and I suit each other so well.We’re both still standing.#landbasedsalmon #dryagedsalmon #coldsmokedsalmon #smallbusiness #craftersgonnacraft
