I didn’t make this for me. I made it because of me I didn’t make this for me. I made it because of me.
Thirty years. Sixteen openings. All of it pointed at one question: what does a product look like when nothing is compromised.
Dry aged to concentrate the flesh. Cold smoked in layers, sweet first, then salt, then smoke that knows when to stop. Cut by hand. Laid properly. Packaged like it matters, because it does.
Most people won’t care. That’s fine.
The ones who do, they notice the texture before they notice anything else. That’s the point. Luxury demands texture. Not softness, not convenience, not something that disappears on the palate and leaves you with nothing.

The world's 5th best restaurant. Two Michelin stars. A man who could stay at altitude and cook for the few. Instead he walked into the everyday. The Tuesday shop. The customer who doesn't know the farmer's name.
That gap between what food can be and what most people actually eat, that's where the real work is.
His innovation centre Spora already put a cocoa-free chocolate alternative into @almamadmarked aisles before any trend piece caught up. That's not marketing. That's a supply chain conversation most people haven't had yet.
And the surplus goods going to JunkFood CPH, feeding a thousand homeless people a day across Denmark. Food waste and social care solved in the same move. No fanfare. Just intention applied to logistics.
Luxury demands texture. The texture here is this: the best food thinking in the world is moving toward the people who need it most.
That's worth watching.
