Spice master.

Now all you muppets who think you know flavour, let me tell you something.

Most of you don’t.

You chase the new shiny object.

The new restaurant.

The new chef.

The new Michelin star.

The next bit of hype somebody tells you is the future.

But how many of you actually stop and taste?

Not eat.

Taste.

Wars were fought over spices.

Countries were built on them.

Empires were created because men crossed oceans looking for flavour.

Yet today people fill a pepper mill without giving a second thought to what is inside it.

Where did it come from?

Who grew it?

Why does it smell the way it does?

Does it make your mouth water before it even touches the food?

Does it wake up every sensory gland in your body?

Does the crack of a pepper mill make you think, bloody hell, I can’t wait to get this in my belly?

David understands that.

Not because he read it in a book.

Not because it is fashionable.

Because he has spent a lifetime chasing flavour.

Because flavour is not a trend.

Flavour is not fashion.

Flavour is everything.
    I was told nobody would notice. Thirty years of k I was told nobody would notice.

Thirty years of kitchens told me otherwise.

Dry aged on the bone. Hung tail down.
Time does what brine never could.
Then you watch a chef take a bite and go quiet.

I’ve always found perfection in the imperfections.
